Today we finished up the jerky… i.e. dehydrating it in the oven. Tastes so amazing! I based the marinade on this recipe, but modified it slightly and ended up with the following ingredients (and a longer marinating time):
2 cups Tamari sauce (wheat-free soy sauce)
1 cup Worcestershire sauce
3 cups cranberry-grape juice (there was a LOT of meat)
¼ cup Teriyaki sauce
1 cup light brown sugar
1/2 teaspoon (or more) ground black pepper, or to taste
Basically blended it all up… then Mom cut the meat into slices and it marinated for a couple of days in the fridge before we finished it up today! The finished product is DELICIOUS.
On to today’s menu!
For breakfast I cooked up some eggs with a side of zucchini. Pretty tasty.
We had a salad with turkey bacon for lunch… sooo good! Loved the salad, it had pine nuts in it and they were delectable.
For dinner I cooked a new version of chicken curry and it was a nice change for sure.
Fun day! Rabbit trail: I received a package from Lime Crime Makeup today… FANTASTIC! I had never tried their products before, but they are quickly climbing to the top of my “favorites” list. The lipstick [which is gluten free!] stayed on through eating and drinking tea. Exquisite. Can’t wait to try out the eye shadow tomorrow! Thanks Lime Crime!
