Things I learned in 30 days… or Paleo: Day 31

  1. I learned that anyone really CAN cook.  Ratatouille says it best: 
  2. I learned that I really DO feel better on Paleo… and this song definitely represents how I was feeling “OK” but not great.   It’s a good reminder to keep going forward, or as Lewis Carroll wrote, “I can’t go back to yesterday, because I was a different person then.”
  3. I learned what beets look like.
  4. I now know what a jicama tastes like.
  5. Miracles happen: I like mushrooms now. I also love cooking now.
  6. Planning ahead is your friend.
  7. Planning ahead makes my life easier.
  8. I don’t miss dairy.
  9. I like coconut milk
  10. Never discount something just because you think the combination of foods is weird.  I actually didn’t cook anything that I didn’t end up liking.
  11. You can make time to eat right.
  12. Eating well is a commitment.

Paleo: Day 30!

Today I made Western Omelets with Sweet Potato Hash for breakfast… we all agreed that this is one of our favorite breakfast meals. 🙂

For lunch, I cooked Quick Paleo Pancakes with lamb patties and eggs… we were in kind of a breakfasty mode today… they were soooo good!!! (I added some cocoa powder to them for good measure…)

For dinner, I cooked some Grilled Chicken with Nutty Cabbage… it was delicious, fast, and easy.

I can’t believe that today is Day 30 of the Paleo 30 Day Challenge!  We made it!!!  We’re all feeling so much better that we definitely want to stick with it.

I love Paleo and Paleo loves me!!!! 😀

Paleo: Day 29

I cooked the Peach Pecan Scramble for breakfast today! Yummy! It’s definitely one of my absolute favorites… totally tastes like bread pudding. 😀

For lunch today, we had leftover chicken (not so soft, so I finished off the peach pecan scramble) and guacamole, I paired mine with leftover butternut squash… the teeth were sore… but it was tasty! 😀

For dinner tonight, I decided to get fancy and cook Hasselbeck Sweet Potatoes (I used this recipe but subbed sweet potatoes for the other potatoes and used olive oil instead of butter) with Salmon and Peas with Carrots… those sweet potatoes are ridiculously good. Mmmmmm!!!! Totally worth the extra time.

Got to have some fun sister time with Tooti today… which of course involved a trip to the tea store… yay!!

Tomorrow is day 30!!!! Yeah!!!! 😀

Paleo: Day 28

I made Egg Tortes today for breakfast… (I was proud of myself, I separated the eggs without an egg separator for the first time in my life) after whisking the egg whites to their optimal fluffiness I couldn’t resist yelling, “It’s so FLUFFY!!!”

I also had to yell, “Someone has stolen three of my TORTES!!!!” (get it? Tortes… instead of tarts.) Anyway, they were delicious.

For lunch today I made beef fajitas with bell pepper and onion… I had an orthodontist appointment earlier (ouch!), so I heated up some butternut squash (since it’s soft) to go with mine… it was fantastic.

I made Greek Salmon for dinner… the recipe was for Greek Sea Scallops… but I had salmon and I’m not really sure if I like sea scallops… it turned out to be amazing! I love salmon!

I wore a bright purple eyeshadow today (Empress by Lime Crime) over their Candy Eyed Primer… and it lasted all day (even through a workout) and it still looks fantastic.  It is seriously my favorite primer now.  Speaking of Lime Crime… they are having a one-day sale on their eyeshadow and primer on October 1, you can find more details on their facebook page.

Paleo: Day 28!!!! Yay!!! Also, tomorrow is National Coffee Day… drink up me hearties yo ho!! 😉

Paleo: Day 27

I made Acorn Squash Hash with Tukey Bacon for breakfast… it took a while for the squash to cook (I had never cooked an acorn squash before…also, they’re kind of impossible to peel…) but it was well worth it! It tasted amazing and the flavor was definitely one that suits the season.

For lunch, I baked some butternut squash (which I had never done before) it was fantastic!  I’m thinking that I could make a really good pumpkiny-flavored pie out of a butternut squash at a later date. I also cooked up some tasty beef that was absolutely delicious.  I mixed up a dressing (recipe from The Paleo Solution) that was absolutely fabulous.  It might be my new favorite dressing.

For dinner… I made… Paleo PIZZA!!!!!! (which we ate while watching The Biggest Loser… it’s okay though because it’s actually good for us. For real!)  😀 It was sooooo fantastic! We pre-baked the crust for about 9 minutes before adding on the toppings and that seemed to work out really well.  Oh. My. Goodness. I realized that I didn’t even miss the cheese factor, when I told Mom and Tooti this, they said they didn’t miss it either.  It was amazing, Tooti said it’s the “best pizza crust ever”… and I have to agree, scrumdiddlyumtious!

Paleo: Day 26

Today for breakfast, I cooked turkey bacon and eggs and an apple hash (happy Johnny Appleseed day!).  It smelled soooo good and tasted awesome. I love apples.

We had salads with crockpot roast for lunch, which was fast, tasty, and extremely easy.

I cooked Almond Chicken for dinner… delicious! It was the perfect balance of flavors; it really reminded me of when Mom used to get Almond Chicken from a Chinese restaurant.

I got my first ever manicure today with Mom and Tooti, we got the shellac manicures… fabulous and the polish is sooo shiny and is totally dry once it sets! I have a plummy raisin color on my nails, it’s really nice for Fall… and it’s purple! 😀

We tried a new kind of Coconut Chai (by Zhena’s Gypsy Tea) today too… it is incredible.  The coconut adds a nice rounded sweetness to the heaviness of the black tea, it’s a nice full flavored tea… wonderful. 🙂

Paleo: Day 25

Today for breakfast, I cooked a turkey bacon, spinach, onion, and egg scramble for breakfast and we had some applesauce for snack.

For lunch today, we had salads with the leftover roasted veggies from last night and some crockpot roast.  Mmmmm, so good!!

I cooked a curried veggie and salmon mix for dinner, which was easy and really tasty.  I’m shocked at how much I LOVE coconut milk now; it’s like my favorite ingredient.  I love it in tea, on Paleo Brownies, in curries, and it almost tastes like cheese or sour cream (especially if cold, when it thickens) on the side of egg dishes.

Day 25!!  The Amazing Race started today, seems like it will be a good season.  Couldn’t believe the girls got the passport back, Twitter to the rescue!

Tomorrow is Johnny Appleseed day… so have an apple and celebrate. 🙂

Paleo: Day 24

For breakfast today, we had leftover roast, eggs, and a side of applesauce… perfect combination of flavors for me!

For lunch, we had salads with tuna, raisins, walnuts, and bell peppers.  The raisins really complemented the tuna flavor, it was an unexpected nice pairing.

I roasted some veggies and sweet potatoes in the oven to go with leftover roast for dinner… delicious! Extremely easy too!

At the grocery store today, we noticed that they carried The Paleo Solution in their book section! So happy! I had to get a picture. 🙂

Learned today what a Delicata squash looks like… also learned that they’re hard to find around here this time of year… and that the texture is supposedly similar to that of a butternut squash. So I got a butternut squash.  This tidbit was brought to you by the helpful people at the Farmer’s Market. 😀

Plus… this was the box on the squash display at the store. Awesome squash.

Paleo: Day 23

For breakfast, we had boiled eggs (I boiled them last night… planning ahead!) with some walnuts and berries.  Mmmmm…

Lunch was really easy too; we had leftovers from last night’s dinner… burgers and veggies, yummy!

We all wanted a tasty treat today and I had been snooping around on the Fast Paleo site and ran across this recipe for Paleo Frappucinos… they were OUTSTANDING.  I was shocked at how they were the perfect balance of sweetness and flavor.  Fabulous!!! Oh so good!!! 😀

I cooked a roast in the crockpot today, so for dinner all I had to do was roast some veggies in the oven and slice the meat.  So good!!! The meat was delicious!!

Funny… a truck with a trailer was driving by and for a second… it looked like there was a Narwhal (yes, a Narwhal) in the back of their trailer.  It ended up being some sort of construction equipment with a mop handle standing in it… not nearly as exciting as a Narwhal… but hey!

If you need a tasty treat, try the Paleo Frap (makes me think of Admiral Ackbar: “It’s a Frap!”)… you’ll be glad ya did! 😉

Paleo: Day 22

Today seemed like a good day to wear my Modern Gypsies shirt… so I did. 🙂

For breakfast today, I cooked some eggs with raspberries, blackberries, and almonds on the side.

We had leftover tacos and cabbage slaw for lunch… yummy!  Mom surprised me with some new spatulas after we went grocery shopping.  I LOVE spatulas.  Thanks Mom! 😀

I cooked Teriyaki Portobello Burgers with steamed broccoli and squash for dinner… sooo good!!! I didn’t like (loathed, despised, couldn’t stand) mushrooms a few days ago… but after the Portobello sloppy joes, I think they are amazing! I actually REALLY like mushrooms now… go figure! They are delicious! 🙂

I watched The Biggest Loser premier last night… so good, this looks like it’s going to be a great season, the contestants seem to really care about each other.  New trainers… Dolvett Quince is hardcore, totally motivating, and might be my new favorite trainer on the show.

Today starts Week 4 of Paleo!!! 😀
