Things I learned in 30 days… or Paleo: Day 31

  1. I learned that anyone really CAN cook.  Ratatouille says it best: 
  2. I learned that I really DO feel better on Paleo… and this song definitely represents how I was feeling “OK” but not great.   It’s a good reminder to keep going forward, or as Lewis Carroll wrote, “I can’t go back to yesterday, because I was a different person then.”
  3. I learned what beets look like.
  4. I now know what a jicama tastes like.
  5. Miracles happen: I like mushrooms now. I also love cooking now.
  6. Planning ahead is your friend.
  7. Planning ahead makes my life easier.
  8. I don’t miss dairy.
  9. I like coconut milk
  10. Never discount something just because you think the combination of foods is weird.  I actually didn’t cook anything that I didn’t end up liking.
  11. You can make time to eat right.
  12. Eating well is a commitment.

Paleo: Day 25

Today for breakfast, I cooked a turkey bacon, spinach, onion, and egg scramble for breakfast and we had some applesauce for snack.

For lunch today, we had salads with the leftover roasted veggies from last night and some crockpot roast.  Mmmmm, so good!!

I cooked a curried veggie and salmon mix for dinner, which was easy and really tasty.  I’m shocked at how much I LOVE coconut milk now; it’s like my favorite ingredient.  I love it in tea, on Paleo Brownies, in curries, and it almost tastes like cheese or sour cream (especially if cold, when it thickens) on the side of egg dishes.

Day 25!!  The Amazing Race started today, seems like it will be a good season.  Couldn’t believe the girls got the passport back, Twitter to the rescue!

Tomorrow is Johnny Appleseed day… so have an apple and celebrate. 🙂

Paleo: Day 21

Today I cooked Turkey-Bacon-Carrot Quiche… it was phenomenal. The coconut milk in it made it taste creamy, almost like there was cheese in it!

For lunch we had leftovers chicken breast from last night with red chard cashew stir-fry.  I didn’t know what chard was a couple of days ago, but I have to say, it was amazing!

I cooked Paleo Tacos for dinner with a Purple Cabbage Slaw… AMAZING! Thanks Tooti for pointing me to the recipe!  None of us missed the taco shells at all… the flavors were delicious!

Went for a walk today, the weather was perfect… and saw a tarantula on the sidewalk… EWWWWWWW!!!!!!!!!!

I rode a little over 10 miles on a stationary bike today… while watching Food Network…  (NEVER thought that I actually WANT to watch something on Food Network at the gym… and enjoy it?!) I learned a new way to chop onions and different herbs to put with lamb… awesome!

It’s kind of crazy to think that 22 days ago I didn’t cook.  Now I do… and I LOVE it. They say it takes 21 days to develop a habit – this is day 21.  I like it!!! Thanks Robb Wolf and The Paleo Solution!!!!

Tomorrow starts week… 4?!? Wow!!!

Paleo: Day 9

I had some leftover steak and macadamia nuts for breakfast.  We found a water leak last night, so it was nice not to have to cook this morning.  Super props to Mom and Tooti for digging up the water pipe!

For lunch I cooked chicken breast and Indian-style slaw.  Flavorful and different.

I cooked chicken curry for dinner, one of Tooti’s favorites.  It ended up working out really well since she dug up the water pipe… like a little “SURPRISE!” to end the day with.  This was my first time EVER making a curry dish and I have to say, it turned out tasting pretty awesome.

I found a delicious coconut milk (canned Golden Star) and it tastes great in coffee too.  Definitely a nice treat.
