Paleo: Day 25

Today for breakfast, I cooked a turkey bacon, spinach, onion, and egg scramble for breakfast and we had some applesauce for snack.

For lunch today, we had salads with the leftover roasted veggies from last night and some crockpot roast.  Mmmmm, so good!!

I cooked a curried veggie and salmon mix for dinner, which was easy and really tasty.  I’m shocked at how much I LOVE coconut milk now; it’s like my favorite ingredient.  I love it in tea, on Paleo Brownies, in curries, and it almost tastes like cheese or sour cream (especially if cold, when it thickens) on the side of egg dishes.

Day 25!!  The Amazing Race started today, seems like it will be a good season.  Couldn’t believe the girls got the passport back, Twitter to the rescue!

Tomorrow is Johnny Appleseed day… so have an apple and celebrate. 🙂

Paleo: Day 23

For breakfast, we had boiled eggs (I boiled them last night… planning ahead!) with some walnuts and berries.  Mmmmm…

Lunch was really easy too; we had leftovers from last night’s dinner… burgers and veggies, yummy!

We all wanted a tasty treat today and I had been snooping around on the Fast Paleo site and ran across this recipe for Paleo Frappucinos… they were OUTSTANDING.  I was shocked at how they were the perfect balance of sweetness and flavor.  Fabulous!!! Oh so good!!! 😀

I cooked a roast in the crockpot today, so for dinner all I had to do was roast some veggies in the oven and slice the meat.  So good!!! The meat was delicious!!

Funny… a truck with a trailer was driving by and for a second… it looked like there was a Narwhal (yes, a Narwhal) in the back of their trailer.  It ended up being some sort of construction equipment with a mop handle standing in it… not nearly as exciting as a Narwhal… but hey!

If you need a tasty treat, try the Paleo Frap (makes me think of Admiral Ackbar: “It’s a Frap!”)… you’ll be glad ya did! 😉

Paleo: Day 20

Today I made turkey bacon and eggs with spinach and onion for breakfast.

We had leftover sloppy joes for lunch… since we were out of Portobello mushrooms, I cooked some normal mushrooms and mixed them in with the sloppy joe meat and served it with spinach.  I think it tasted even better today.

For dinner, I cooked some baked rosemary chicken, nutty cabbage, and strawberry soup… fabulous! The cabbage was amazing, it tasted like I was eating at a Chinese restaurant and the strawberry soup kind of tasted like a sherbet. So good!!! 😀

Day 20: Success! 😀

Paleo: Day 19

Yarrrr!!! Ahoy me hearties! Here’s hoping that ye had a grrreat Talk like a Pirate day, ya landlubber!

Fer breakfast I cooked us some cackle-fruit with left overrrr sweet potato hash.

For lunch we had a salad (bunny grub!) with seafarin’ tuna.

I cooked us up some sloppy joes (with Portobello mushrooms for the buns) in the galley for ourrr dinnarrr this evening.  Shiver me timbers, it was delicious (and this is coming from a matey (me-self) who didn’t like mushrooms before)!

Paleo: Day 18

We had eggs and sweet potato hash for breakfast today and a salad with the crockpot chicken for lunch.  Most excellent!

For dinner I cooked a Salmon Scramble (which I learned you can actually use any type of meat with) and it was extremely easy and super tasty.  Tasted like comfort food… Delicious! 😀

It rained today, I’m so thankful for it!

Paleo: Day 14

Today for breakfast, I made a Peach-Pecan scramble… it tasted like bread pudding. FABULOUS.

I put a chicken in the crockpot to cook so it would be precooked for tomorrow. 🙂

We (me, Mom, and Tooti) had a fun day all hanging out and shopping, we took some beef jerky, celery, and oranges in my small pink ice-chest in the car with us and it was SO nice to have food with us when we were done! That jerky is amazing.

For dinner, I cooked Chicken Alfredo (Mom cooked the spaghetti squash for me so it would be ready sooner)… how the sauce tasted so incredibly creamy with no dairy ingredients was crazy.  It was so good!!! (Recipe can be found in The Paleo Solution) Delicious.

The America’s Got Talent finale results show was tonight… so psyched for Landau E. Murphy, Jr.!  Congrats!!!! He’s been my favorite from the beginning of the season… AMAZING talent and what an incredible story!  I cannot think of a more spectacular ending to this season.

I can’t believe we’re already on Paleo: Day 14!!! 🙂 Love it!

Paleo: Day 11

I was really curious about how breakfast world turn out… because this morning, I cooked Ginger Eggs.  Sounds odd, tastes amazing!  Way happy with how they turned out, could definitely taste an Asian influence.  Delicious.

Got some sister-time with Tooti this morning, super fun and she helped me plan a surprise for Mom… more on that later.

I boiled some beets (best song for cooking beets? Beat It. Also, try busting out some of those dance moves the next time you go grocery shopping.) for a beet-apple salad to go with the cod for lunch… A few days ago, I didn’t know what a beet looked like (other than the canned kind).  I sure had never cooked one before!  The salad was definitely tasty and while beets don’t make my “LOVE it” list, it was a fun experience and different type of treat.  The fish was delish.  Side Note: Beets WILL stain you hands.  A lot.

I cooked some chicken and cauliflower in the crockpot for dinner and it was time to start the surprise… I saw this recipe on FastPaleo.com for Paleo Brownies this morning and after some thought (and sneaking help from Tooti), I decided that it would make a nice surprise for Mom this evening.  I’m so proud of her for doing so well (and being open to) going Paleo that I wanted to do something nice to surprise her.

So, when we were out, we picked up some 85% Lindt Dark Chocolate… and after insisting that Mom take a break and have some tea in the living room… I made the brownies.

OH. MY. GOODNESS.

When I took the brownies out of the oven and surprised Mom with them, she was happily shocked! She had no idea that I was making brownies!  Best brownies ever.  I mean EVER. Of any kind.  They were DELICIOUS. We paired them with coconut whipped cream too… best ever.

So good! Mom was surprised, it was amazing.

Paleo: Day 10

The water-leak got fixed today!!! Yay for running water!

I cooked some turkey bacon for breakfast, served with applesauce and some almond butter. FANTASTIC.

We went to the Farmer’s Market today, the weather was nice and it was fun to be out.  I picked up some ingredients for the next few days and everyone was so nice!  One lady even threw in a yellow onion with the purple ones that I bought, definitely a kind surprise.

For lunch, we had leftover steak on salads… yummy! (and easy!)

Apparently today was National Lacemaking Day (UK maybe?).  I don’t make lace, but I figured it was a good day to start the beef jerky making process.  Because jerky is totally like… um, meat’s version of lace… right? 😉 Anyway, we found a great marinade recipe that I mixed up and Mom sliced up the meat… go teamwork! The jerky’s marinating now.

For dinner, I cooked chicken curry again… so good! This time, I also cooked a cucumber soup, I was a bit hesitant, but happily shocked when it tasted AMAZING.

Paleo: Day 3

Yay Day 3! Today we had leftovers from last night (plus some avocado) for breakfast.  Tooti was leaving early, so I packed up her breakfast last night (thanks for the suggestion Tooti!), she said it tasted good this morning.  Tasted good to me too!

For lunch, after running some errands, Mom and I had a tuna cabbage salad, surprisingly tasty, super fast and easy. Then had leftovers from lunch as snack later.

I’d started a roast in the crockpot after breakfast and pre-chopped the veggies (veggies got added in a couple of hours before dinner to avoid getting mushy).  I texted Tooti that the roast would be done when she got home… It smelled awesome.  When dinnertime rolled around, all I had to do was dip up the veggies and cut the meat, delicious!  Tobey and Tinkerbelle were happy too, they got some Paleo meat snacks from it.

Again, the theme today: easy to make, tasty to eat.

I still love crockpots. Do they come in purple?

Grocery Shopping Trip 1

Last night, Mom and I pulled a Code 2319 by cleaning out the cabinets, fridge, freezer, and pantry.  At first it felt odd, weird, and even wrong, but once it was boxed up it felt awesome, like this is definitely what I should be doing.  Now that the cabinets are clear, it’s time to go shopping.

Armed with my Week 1 shopping list (from www.RobbWolf.com), The Paleo Solution book, and wearing my Gypsies shirt for moral support (well, actually it’s one of my favorite shirts now and it seemed to fit the occasion), we embark on the awesome adventure of hunting and gathering our meal ingredients.  Ok, in all actuality, “hunting and gathering”  in this case involves chucking stuff into the grocery basket… but that doesn’t sound nearly as impressive.  Anyway, here we go.

After going to the first store (shopping stop 1), I was pleased that we were able to get a great portion of our veggies and fruits for the week… for under $30!  To illustrate that healthy foods can be affordable (if you make them important to you) here’s a couple of pics of what we got:

Then it was home to put the newly gathered foods into their new home and then on to our fitness class.

I love the ladies in the class Mom and I go to, they are so fun and it’s nice to see familiar faces.  We got to chatting with one of the ladies and it turns out that her daughter has gone Paleo! So encouraging and exciting to find out!

After the class (where I found out that I’m in better shape than I thought!), shopping trip 2 was in order, this time meat and a few more produce items were locked stocked and loaded.  Once these were put up, it was time for our 3rd and final shopping trip of the day, this time looking for things like spices, eggs, nuts, tomato sauce… all of which were hunted and gathered successfully.

I learned to compare prices, see which stores are better for certain things and wrote down some of the comparisons.  It’s so nice to know that I can do this.  Thanks Mom for helping me learn which stores are better for what, prices, etc.

Paleo starts tomorrow!
