Paleo: Day 15

The weather cooled off a LOT today… I was tempted to grab a sweater this morning, but then thought better of it as it was probably 75 degrees outside… so nice!!!! 😀

I cooked some lamb patties and apples with cinnamon and cloves this morning, which complemented the cooler Fall weather with fantastic Fall flavors. So good! I love the apples especially.

We reheated some Chicken Alfredo that was leftover (planned ahead) for lunch, super easy… yum!

Mom and I went to Zumba class, met a bunch of really friendly people and had a lot of fun.  I had fun going to Zumba before (LOVE it), but it’s been a LOT more fun with Mom coming too… workout buddies really do make a difference!

I cooked a meaty spaghetti sauce served over roasted green beans for dinner… tasty!

Today starts Week 3 of going Paleo… what a delicious journey so far!

Paleo: Day 8

We had turkey bacon, applesauce, and walnuts for breakfast.  I wouldn’t have thought about combining the 3 into a meal, but it was great!

I made a salad with grilled chicken for lunch and the flavor was incredible.  It’s possibly my favorite salad now.  It was so good that Mom asked if I could “put a star” by the recipe (as a favorite).  Awesome.

After lunch, I went ahead and got the rest of the salad ready for our snack, so when I got back from Zumba with Mom (Woohoo Mom!) I just threw it all into a bowl and mixed it up.  I’m learning that planning ahead definitely helps.

For dinner I steamed veggies and cooked some steak.  I haven’t really done steak that much, ever, so I kind of guessed on the spices.  Salt, pepper, garlic powder and paprika was the combination today and it turned out to be a winner.  Sooo good!!

Paleo: Day 1

Today was Day 1 of going Paleo.  Yes, I cooked all of today’s meals and not one of them involved cake pops. LOL. Breakfast was fun and pretty easy once I got into the swing of things and it tasted gooood.  Lunch was reeeaaallly tasty and pretty easy too, when I was chopping the veggies, I thought of Meryl Streep on Julie and Julia… I love that movie, she’s so funny as Julia Child. I was pretty surprised that I could cook chicken fajita salad for lunch and have it taste that great and be that filling.

The snack, we decided to divide into “pre-Zumba” and “post-Zumba” which ended up working out really well. It gave me time to get home from ZumbaTone and have time to change before I started dinner… dinner….

mmmmmm…. Dinner. Was. AMAZING.  This was seriously one of the absolute BEST salmon meals I’ve ever had. For real.  Mmmmmm so good!!!! Not to toot my own horn or anything…  *toot toot* but I’m pretty surprised and proud of myself… and guess what? BOOM. It was EASY. Honestly, the guide in The Paleo Solution is SO well thought out that it really made everything super-de-duper easy to follow.

The best part about this: *cue music* I feel good… na na na na na na na… So good!

I think coconut oil is my new favorite.
