Paleo: Day 26

Today for breakfast, I cooked turkey bacon and eggs and an apple hash (happy Johnny Appleseed day!).  It smelled soooo good and tasted awesome. I love apples.

We had salads with crockpot roast for lunch, which was fast, tasty, and extremely easy.

I cooked Almond Chicken for dinner… delicious! It was the perfect balance of flavors; it really reminded me of when Mom used to get Almond Chicken from a Chinese restaurant.

I got my first ever manicure today with Mom and Tooti, we got the shellac manicures… fabulous and the polish is sooo shiny and is totally dry once it sets! I have a plummy raisin color on my nails, it’s really nice for Fall… and it’s purple! 😀

We tried a new kind of Coconut Chai (by Zhena’s Gypsy Tea) today too… it is incredible.  The coconut adds a nice rounded sweetness to the heaviness of the black tea, it’s a nice full flavored tea… wonderful. 🙂

Paleo: Day 25

Today for breakfast, I cooked a turkey bacon, spinach, onion, and egg scramble for breakfast and we had some applesauce for snack.

For lunch today, we had salads with the leftover roasted veggies from last night and some crockpot roast.  Mmmmm, so good!!

I cooked a curried veggie and salmon mix for dinner, which was easy and really tasty.  I’m shocked at how much I LOVE coconut milk now; it’s like my favorite ingredient.  I love it in tea, on Paleo Brownies, in curries, and it almost tastes like cheese or sour cream (especially if cold, when it thickens) on the side of egg dishes.

Day 25!!  The Amazing Race started today, seems like it will be a good season.  Couldn’t believe the girls got the passport back, Twitter to the rescue!

Tomorrow is Johnny Appleseed day… so have an apple and celebrate. 🙂

Paleo: Day 16

Today for breakfast, I cooked some more lamb with cooked apples on the side. It smelled so good!

For lunch, we had a chicken apple salad using the chicken that I had cooked in the crockpot the other day… yum!

We reheated the spaghetti sauce and green beans from yesterday for snack today, easy and extremely tasty.

I put some meat in the crockpot for dinner, so when it was time to eat, all I had to do was steam the veggies to go with it, which was really nice.

Mmmmm… I love tea.
