Things I learned in 30 days… or Paleo: Day 31

  1. I learned that anyone really CAN cook.  Ratatouille says it best: 
  2. I learned that I really DO feel better on Paleo… and this song definitely represents how I was feeling “OK” but not great.   It’s a good reminder to keep going forward, or as Lewis Carroll wrote, “I can’t go back to yesterday, because I was a different person then.”
  3. I learned what beets look like.
  4. I now know what a jicama tastes like.
  5. Miracles happen: I like mushrooms now. I also love cooking now.
  6. Planning ahead is your friend.
  7. Planning ahead makes my life easier.
  8. I don’t miss dairy.
  9. I like coconut milk
  10. Never discount something just because you think the combination of foods is weird.  I actually didn’t cook anything that I didn’t end up liking.
  11. You can make time to eat right.
  12. Eating well is a commitment.

Paleo: Day 30!

Today I made Western Omelets with Sweet Potato Hash for breakfast… we all agreed that this is one of our favorite breakfast meals. 🙂

For lunch, I cooked Quick Paleo Pancakes with lamb patties and eggs… we were in kind of a breakfasty mode today… they were soooo good!!! (I added some cocoa powder to them for good measure…)

For dinner, I cooked some Grilled Chicken with Nutty Cabbage… it was delicious, fast, and easy.

I can’t believe that today is Day 30 of the Paleo 30 Day Challenge!  We made it!!!  We’re all feeling so much better that we definitely want to stick with it.

I love Paleo and Paleo loves me!!!! 😀
