Paleo: Day 5

Happy Labor Day!

Today for breakfast I cooked a ground beef and spinach stir fry, served with a couple of eggs.  It was different and good.

The cool front that came through last night stuck around today, so Mom and I decided to go out and snoop around enjoying the weather.  We had a lot of fun and the weather was INCREDIBLE.

I cooked up some tilapia with marinara sauce for lunch; it had this Italian-y flavor flare.  I wouldn’t have thought of the tilapia-marinara combo, but I loved it!  After lunch we ran (drove) to the store and the weather was so rad that we drove home with the windows down, it felt great!

I’ve been excited about tonight’s dinner since yesterday… Spaghetti squash with meat sauce.  I LOVE spaghetti. L-O-V-E. Love, love, love it.  I had a lot of fun cooking it and the taste was even better than I had imagined. It was so good that there were no leftovers when we were done. I felt like I was in the scene on A Night at the Opera (Marx Brother’s) where they’re on the cruise ship getting Italian food and there’s this GIANT pot of spaghetti. LOVED it.  It was so good… So good.

Paleo: Day 2

Today went pretty well and tasted great. Breakfast consisted of leftovers from last night and even though Mom had to “pretend she was Scandinavian” to eat fish for breakfast, I thought it was pretty tasty.

After figuring out how to make cooking lunch fit with today’s schedule, I ended up pre-cooking and Mom brought it with her when she met Tooti and I to go to Whole Foods.  It worked out (thanks Mom!) and again, tasted awesome.

Whole Foods was having a sale on Free-Range ground beef, so we decided to stock up.  I don’t think I’ve ever been so psyched over ground beef before, but I was ECSTATIC.  I resisted the urge to say, “Meat snacks!!” (wouldn’t that be an awesome ringtone?!) to the cashier when we were checking out, though I did feel pretty carnivorous loading up the meat onto the checkout counter.  It was great.

Dinner was super easy.  I started a chicken in the crockpot after breakfast (many squeals and ewws when uh, cleaning out the chicken…  why do they put all of the stuff back in that they just took out? We bought this one chicken that had 2 necks in it once… I think I was 13. Made me wonder…). This was my first whole chicken to crockpot cook EVER and with some spice-Jedi advice from Tooti and cooking tips from Mom, it turned out to be great.  Tooti asked me if I ever thought that I could cook like this and the answer was no.  Thanks sis! To complete dinner, all I had to do when I got home was steam the broccoli and make a side-salad.

I love crockpots.
